1 1/2 cup blue cornmeal
2 teaspoons baking powder
3 tablespoons sugar
3/4 cup milk
1 large egg, beaten
3 tablespoons bacon fat
1 small can green chiles, chopped

Preheat oven to 350°F. Combine cornmeal, baking powder and sugar. Mix remaining ingredients separately. Add liquid mix to dry ingredients and mix thoroughly. Pour into a greased baking pan and bake for 30 minutes or until a wooden pick inserted in the center comes out clean.

1 pound Sausage
1 large Onion, chopped
2 Eggs, beaten
1 1/2 cups Self-rising cornmeal
1 cup Cream style corn
3/4 cup Milk
1/4 cup Oil
2 cups Grated cheddar cheese

Brown sausage and onions; drain well. Combine eggs, cornmeal, corn, milk and oil. Pour half the cornmeal mixture into dish. Sprinkle with sausage mixture and cheese. Pour remaining batter over top. Bake 30-40 minutes at 425 degrees.
